I've always been under the impression oysters are best eaten in months with an "R". These months are the ideal time to harvest oysters. My dad used to own a shrimp boat so I grew up eating all kinds of seafood. The ones I enjoy the most are crab and oysters. I love roasting oysters over a fire and I'm a pro at shucking them. I enjoy them most with a concoction my family created that consists of salt, pepper, hot sauce and lemon/lime. Pour a little bit over a nicely shucked oyster and that is what you call heaven on a cracker!
